I'm a novice in the area of encryption software so I ask for your indulgence. I set up a file container where I hope to securely store personal documents. However I'm at a lost as to how I go about placing/saving existing and future documents in that container, or is that really the way it's supposed to work?

After a container is created you need to mount it. A mounted container will appear as a new drive in your system. Consider it like a flash thumb drive. Now you can securely store on that drive anything you need to, just like you do with a regular flash stick.

There are many videos on YouTube that can present this concept visually.
