setting up outgoing smtp server on iphone

    when sending emails via my iphone I can use wifi (mostly) and data (when on the road). Wifi servers will change depending on where I am using wifi but data is coming via my phone provider.
    So, why does my iphone show all different server options for outgoing smtp servers? If when using data I can only use my data plan provider, should I not set up each email account to use this server as opposed to the "regular" server I am using via wifi? I am trying to understand the pitfalls between convenient set-up and to avoid emails not being sent and only placed into the outbox due to the server not allowing a relay and possible security implications by always using the phone smtp server (no ssl, no password).
