    The only animal I fear is the carcajou or the Glutton. The Indians here
    call it "the devil of the forest". It is both dangerous and mean animal,
    you can't trap it, it is too sly to get caught. :eek: Fortunately we have just
    few of them in Quebec. :)

    that the landscapes are magnificent! Game is plentiful in those areas

    Hey, I went to a restaurant yesterday, a place where they serve "wild meat" only and I had a buffalo steak along with corns and red beans. I like the steak and the corns but I did not like the spice they put in the red beans. Another person had Caribou and it tasted real good. :) Oh! Bigc, I know a man who killed a black bear and he wanted to eat it after. So, he did it the same way he used to do for a moose :eek: --Parts are hanged 2 days for the moose--But the same day he killed it, just a couple of hours after; he went to check the meat , he, to his great disapointment, had to take it off the hooks and get rid of it for it was already gone bad.(yuk!) Bears should be cut/arranged immediatly after killing. Just a few people eat that kind of meat here. :(

    That is right it spoils very quick. Most people don't realize that bear and pigs are fully related and bear meat has a lot of the properties of pork such as the ability to give you triconosis.

    Yes, it was good. It was even more lean than beef. :)

    Buffalo is excellent, the only beef type meat that is even close to being as lean as buffalo is texas longhorn.

    Actually, there are some Longhorns not far from me here behind a Walgreens drugstore believe it or not. They look lean on the hoof.

    Longhorn is pretty good eating. Just don't get on the wrong end of those horns while he's still alive. OUCH :D :eek:

    Long horn is pretty good but angus has definatly got it beat ;)
