Why do you want to do that? Unless you are having problems with a new version, it's best to be using the latest version of any browser, as it can be a security risk using old versions.
I have mine set to "ManualAppUpdateOnly" via policy so I can backup my portable version before installing a new version. No real need to disable updating, as long as you can control it.
Just create a text file and copy paste the command below, Save the file and then rename it to policies.json. Create a folder named distribution inside Firefox installation directory in Program files, and put this file in there. Restart Firefox, updates will be disabled. When you wish to update, just remove this directory, update Firefox, and then move it back to disable further updates. I have been using this method for years without any issues.

I was reading this thread and thinking "what are they talking about" but then I realized you're on Windows.
you cant disable firefox updates within firefox! and same question as roger in #3 - why do you want to disable updates? if you experience problems then speak about, not this very questional behavior.
Wow just wow, there's something called Xanax I don't like autoupdates either. I want and have control on when and why update my browsers. Period.
