Depends on the device and the features it offers. My Garmin does not but the built-in navi in my car allowed me to show alternate routes to "Saved Destinations", then I could select "Preferred Route" to it. I could also have it record my trip, then save that route as my "Preferred Route". But that was typically a hassle because every time I started to record, I remembered I had to go to the grocery store or something else would cause a detour, then it messed up the "Preferred Route"! With my Garmin, I just have to turn where I want to and then the Garmin will "recalculate" and eventually pick the right route.
