What recommendations can be made for managing DAT/Engine updates for systems located within a DMZ with no connection to the Internet?

Why don't you give them internet access? After all, a dmz is a network segment that sits between a trusted and an untrusted network (internet) and is protected by screening routers (firewalls) on both ends.
