Windows Server Resource Monitoring

    I have two older Servers that I would like to accurately monitor (and preferably record) the CPU and RAM usage over a period of at least several hours.

    Server #1: Windows Server 2003 32 bit, 2 Dual Core Xeon CPU's, ~3.5 GB RAM (Max. for 32 bit)
    Server #2: Windows Server 2008 R2 64 bit, 2 Quad Core Xeon CPU's (Hyper Threading Enabled, 16 Logical Cores), 6 GB RAM

    It looks like Windows Server 2008 R2 may have some built in tools that may be able to do this, but I have not yet tried them.

    Server #1 is the one that I am most interested in.

    Please recommend the best way(s) to monitor/record the usage of these Resources.
