I noticed that the age/popularity heuristics didn't flag the latest Hitman Pro beta, while they do other "rare" software that has been released longer ago. That software hasn't been signed while HMP has been. Does that mean that the age/popularity heur automatically trusts signed software?

No it doesn't, but it does take into account where the software comes from and other files that enter into the system so it won't always block every semi-new file.
