Been doing Tracert a lot recently.

The first hop in the chain between myself and whatever URL/IP I'm mapping always seems to be the same.

Ideas as to how to alter routing tables from the end-user's end so that I'm not always sending data through the same IP/IPs?

Just concerned about MITMs or logging.

The first hop will always be your router and the next your ISP.

Yes, the first hop is the router. So use another router. Or a pfSense VM.

If you run a VPN service in the router or a pfSense VM, the first hop will be the VPN tunnel adapter of the router or pfSense VM.

The second hop is the ISP. Using a VPN service, that will be its ISP. Or use another ISP via WiFi hotspot. With a long-range WiFi dongle, or better a high-power radio and parabolic antenna, you can hit WiFi hotspots at several km.
