    Hello,
At what point should I consider using a SQL server instead of the provided Jet Database.

Would 250 clients be too much to handle for the Jet Database ?

I don't think 250 clients would be a problem for the Jet database. I've been running about 150 clients for 6 months and the combined database files only amount to about 4mb and db queries are running at a whopping 1.4 q/sec. The load is frankly non-existent and I wouldn't bother thinking about converting to MSSQL or Oracle unless I was experiencing performance issues or problems that one of those RDBMS could resolve.
