Is there a way to stop Eset from checking to see if Windows OS's need updates?

Not just disable the notification, . . .

"Open the tray icon, press F5, look on the left side under 'Tools', 'System updates', and select 'No updates'."

. . . but stop the check all together. (No dllhost running in the background)

    thanks chris

I don't think Eset checks in WU the background after it is deselected. Whatever is running is Windows own service.

The dllhost (rundll32) things you are referring to are the the Windows Update service that comes with the operating system from Microsoft. You'll need to turn off automatic checking for updates from your control panel to do that, though it isn't recommended.
