I have a office that the users are claiming Outlook to be slow, I would like to test ESET with the Mail Protection disabled, but when I disable it the icon turns yellow. Anyway to disable and make the icon stay green?

In the advanced settings, at the bottom of the list under Email client integration, Uncheck Integrate into Microsoft Outlook. There is a one-time scan Nod32 does on the user's PST/OST the first time it is installed, after which things tend to settle down and performance goes back to normal. You might better off just letting people know that and waiting a day or two to see what happens.
