    Henry’s Crawfish Pie


    Henry’s Great Alaskan Restaurant

    This is a huge recipe—enough for all the gang—or the jambalaya can be frozen and reheated in hot water.

    Jambalaya
    1 stalk diced celery
    6 diced onions
    3 diced red peppers
    1 bunch green onions, diced
    1 lb. butter
    1can bacon bits
    1 cup granulated garlic
    2/3 cup paprika
    1/2cup cajun spices
    1/4 cup cayenne pepper
    1 tbsp. white pepper
    2 tbsp. thyme
    1/2 cup basil
    1/2 cup oregano
    2 tbsp. fennel
    1 tbsp. coriander
    2 tbsp. parsley
    1 #10 can diced tomatoes

    Stock
    1/3 gallon chicken stock
    1/3 gallon beef stock
    1/3 gallon clam stock

    Place all veggies, butter and bacon bits into a very large stock pot. Cook on high heat until veggies are tender. Add spices. Add tomatoes and simmer for five minutes. Add stocks and bring to a boil. Thicken with roux and let simmer 5 minutes.

    To assemble the pie
    1/2 gallon jambalaya
    1/2 quart whipping cream
    8 puffed pastry sheets
    4 eggs, beaten
    1/2 cup crawfish, per pie
    1/2 cup baby shrimp, per pie

    Place jambalaya and whipping cream into a sauce pan and heat to a simmer, do not let boil. Remove from heat and let settle. Place meats in one serving oven-safe container, (a glass pie plate works well) and cover with sauce. Brush outside edge of pastry dish with egg wash. Trim puff pastry one inch larger than the circumference of the dish. Place pastry sheet on top of dish. Place in a 450°F oven for 12-15 minutes.

    Grilled Turkey Scallopini with Dijon Sauce

    1/4 lb. turkey scallopini 500g
    1/4 Cup vegetable oil 50 ml
    1/4 Cup honey 50 ml
    2 tbsp. Dijon mustard 25 ml
    2 tbsp. lemon juice 25 ml
    1 clove garlic, minced 1
    1/4 tbsp. dried thyme 1 ml
    salt and pepper
    Combine all ingredients except turkey. Brush on turkey scallopini. Grill over medium heat 2 - 4 minutes each side or until no longer pink in centre. As an alternative, the turkey can be pan fried in i tbsp. ( 15 mL ) vegetable oil for approximately 2 minutes each side.

    Preparation Time: 5 Minutes * Cooking Time: 10 Minutes

    Louisiana Pecan Pralines

    2 C sugar
    1 teaspoon baking soda
    1 C buttermilk
    3/4 C butter
    1 1/2 teaspoons vanilla
    1 1/2 C chopped pecans

    Makes 3 Dozen Small Pralines

    In a large, heavy saucepan, cook sugar, baking soda, buttermilk, and butter to soft ball stage (240° F on a candy thermometer). Stir frequently while cooking. When mixture reaches soft ball stage, remove from heat and beat until mixture lightens in color and thickens, about 5 minutes. Stir in vanilla and pecans. Drop by tablespoons onto a greased baking sheet. Allow to cool completely and harden -- at least 12 hours.

    VENISON STEW
    2 lb. venison, 1 onion, 2-3 cloves garlic, 1 cup carrots , 1/4 cup oilive oil, olive oil, 1 cup water, 1 cup madiera wine.

    Sauté onions and garlic in olive oil until translucent, then remove from pan. Brown chunks of venison in olive oil. Cover with water and bring to a boil. Add carrots, onions and garlic. Pour in madeira wine. Simmer until meat is tender and wine had begun to thinken.
