I remember that Evernote was a bit of a hype years ago, but I personally never needed such a tool. Apparently, Bending Spoons has 90 million active users, so they must be quite successful.
Evernote has self destructed after their UI redesign. For example the Evernote iPad app doesn't synchronize in the background anymore until you open the app and often also need to force resync. Sync takes ages to complete. There are plenty of free Open Source alternatives such as Obsidean and Logseq or paid options such as mem.ai or Roam Research.
On Android it would most likely be issue with vendor-issued patches/modification to OS. There is even webpage for that https://dontkillmyapp.com/ Are you sure similar thing does not happen on iOS? Obsidian is not open-source unfortunately. Comparing Evernote to Obsidian is orange to apple comparision, since the former allows for multimedia-lish content while the latter is plain-text-based (Markdown). Some people use both, since Evernote is making it easier to digalize things, and then copy to other note-taking app for further integration/refinement/organization/you name it.
