Runbox is a great email service. Their desktop version is sweet. Super configurable and comes with up to quantity 100 aliases. I'll always be a subscriber.

"Runbox is located in Norway, and in accordance with Norwegian privacy laws we commit to never disclosing any data unauthorized or tracking your usage."

"Store your email in a maximum security data center and protect your communication with Two-Factor Authentication, Perfect Forward Secrecy SSL, and PGP encryption."

Activation requires sms in most cases, and the mentioned sites with fake numbers allow you to receive a message thus to see the content . As I believe you cannot be anonimous online you are at least not revealing the private number to sb. As for email a good one is with antispam, 2 factor autentication or usb key, with option to encrypt messages and some anti malware measures . I'd say 2 factor aut. is more important than not giving out a number. 2 factor with fake number is risky as you read the message from a sites rather than isolated device

Well, I can assure you that I have multiple Tutanota and Protonmail accounts and I use them since years with VPN and always with the same IP address for each session.
Sometimes when making a new account with Tuta through VPN, it flags it for a 48 holding time but then it gets activated.

On Ebay they ship pre-activated SIM cards from UK, no info requested. Just use that number and you are good to go.
Or pay for a service like this:
