At least with Android Pie you do have options. You can quickly toggle a button and PIE disables all biometric access. This means you can have a super long passphrase that you would never use IF it was how you daily accessed your device - due to length and complexity of the passphrase. Read about Lockdown. My phones are absolutely encrypted and Lockdown takes about 2 seconds to engage.

iPhones have the same thing. You long press the 'right' button, and either 'volume up' or 'volume down' and it will temporarily disable face id and force you to use your passcode. To permanently disable it, just go into settings.

I have disabled face id and I am now using a loooong passcode, that I change periodically. The reason is, the phone unlocks too easy with face id, even at unwanted moments.

I am a little behind on current iPhone trends. Are you implying that you CANNOT switch from face ID to fingerprint ID if that was your better option? I wouldn't like that!

Starting with the iPhone X, there is no fingerprint scanner.
