Their support told me they were discussing the issue of daily updates. Let's keep our fingers crossed. I like how Baidu is light and unobtrusive. For example, Qihu doesn't allow you to turn it completely off, its real-time monitor always starts up on, the off setting doesn't stick after a reboot. Baidu is different, it's lighter and more respectful (Qihu also reduces the strength of its Proactive Defense when you're offline, Baidu protects you the same on or offline).
Actually that's only a good thing, as users that tend to turn their AV off (for various reasons) sometimes forget to turn it ON again during the same session, but then it's at least ON (as they expect it to be) the day after when they turn on the PC again.
No, it's not a good thing necessarily. From your perspective, it's a good thing, from mine it's bad. In reality, it's only a thing, with advantages and with disadvantages. To be good for everybody, they should add a setting like "Allow permanently turning off real-time protection," with a nice warning for the average user.
Ok so I decided to try this on a machine and am surprised how light overall BAV is. It doesn't seem to slow anything down and is using minimal CPU, RAM, and HDD I/O. With Kaspersky design assistance and Aviras engine and/or signatures; I'd be interested to see this compared with some other similar AV's. Overall, it seems impressive.

Hi Pablo, I'm pleased you got it sorted. From personal experience I've found the Baidu team's response to their customers problems is quite good. Lets hope after all your frustrations BAV lives upto your expectations.

Oh yeah, they don't work on weekends. They are currently issuing updates manually. They promised to do it daily from Monday to Thursday. They also promised to automatize this process in the future so they can issue at least daily updates 7 days a week.
Today Baidu AV auto updated to the latest Avira defs 7.11.100.20 (Sep 3rd) and also updated it's own Defs 2111374090. Looking good. https://www.avira.com/en/support-vdf-qa-realtime-status
