Zeewolf met een mosterd-dragonkorstjes op een bed van ijsbergsla en een beekje Watou Tripel

Biermerk:
Watou Tripel

Ingrediënten:
800 gr Zeewolffilets
3 sjalotjes
2 flesjes Watou Tripel
2 dl visfumet
1 broccoli
800 gr aardappelen
olijfolie
nootmuskaat
200 gr paddestoelen
beetje echte boter
chapelure
mosterd
1 krop ijsbergsla
30 gr suiker
2 dl room
peper en zout
verse dragon
beetje melk

Bereiding:
Zeewolf is dit jaar uitgeroepen tot vis van het jaar. Allé, weeral een vis die binnenkort zeldzaam wordt. Profiteert er nu nog van.

De sjalotjes fijnsnipperen en fruiten in boter. De Watou Tripel er bij voegen en laten inkoken tot de helft. De visfumet (mag uit een pakje en opgelost in wat water) bijvoegen en nogmaals wat laten inkoken. De saus zeven.

De saus afwerken met de room, laten inkoken tot sausdikte en op smaak brengen.

Chapelure mengen met de verse dragon en fijnmalen in een keukenrobot tot het een frisse groene kleur heeft. Vlak voor het einde bij dit mengsel olijfolie toevoegen zodat deze goed mee gemengd wordt.

De vis in stukken snijden van ca. 200 gr per persoon. De bovenkant insmeren met mosterd en die zijde paneren met de groene chapelure. In een ingesmeerde ovenschotel 5 à 10 min. bakken.

De aardappelen koken. De broccoli koken. Van deze samen met een beetje melk en boter een fijne puree maken. De puree kruiden met nootmuskaat en peper naar smaak.

De grootste slabladeren apart houden à rato van 2 bladeren per bord. Goed wassen zodat de biobeestjes er af zijn. Die grote slabladeren pocheren in licht gesuikerd water met wat boter en peper. De bladeren laten uitlekken.

De paddestoelen indien gewenst in stukjes doen en bakken.

De vis even in de oven onder de grill zetten zodat een korstje ontstaat.

De bladeren in het midden van het bord schikken. Hierop de vis leggen en de saus er rond lepelen.

Serveren met wat paddestoelen en de groene broccolipuree.

Smakelijk!
