The setup wizard is ready to use and gets you going quickly and has tons of features.
Marcel, the main dev is also the lead behind NetGuard, a very powerful firewall app that lets you control Internet access to individual apps to protect your privacy.

A quick Google search will provide much more info but, IMHO, it seems a good choice.

FairEmail is only a widget for reading and writing emails, not an email service or service provider. And widgets can be made in all sorts of ways, including those that are specifically designed to freely access your emails and do whatever they want with them. It may be safe today if you let anyone read your emails, save them or copy, etc. your emails where ever, but tomorrow maybe not so good if somewhere is stored your all emails and nobody knows who can read them or do with them what ever they want.
However, I would recommend not using things, that are designed only solely to collect as much information about users as possible.

Basically, everyone collects. The only question is who you trust to really collect the information that is necessary to improve the service. But most still want completely different information and that is what they collect. Simply put - everything that can be sold or used against you to extort something from you is collected. Usually it is money.
And often people give all their information to complete strangers and for free, only to later start paying for it themselves to ensure that this information is not misused or shared on the internet for completely different purposes.
Keep in mind that anything what You have put on the internet that is not protected in any way, such as encrypted, is public.
And yet - never use shared programs and platforms for encryption, where you also will save and/or store the initial information and everything necessary for encryption, i.e. passwords and other things needed for encryption. Then it is also the same as public info.

I use K-9 Mail, but currently, K-9 Mail is essentially being transitioned into "Thunderbird for Android".

Of course it's important to not use e-mail apps that violate your privacy with trackers and maybe also store your e-mail on third party servers.
FairEmail however is an open-souce app that does not collect information or track you and your e-mails are not stored on third party servers.
It also enhances security by using a safe view by default (removing scripting, styling and unsafe HTML) and some other features. You can further tweak security for example by hardening choice of TLS ciphers and requiring TLS 1.3.
