It's hard to replace Youtube, because of community. It is easier to add some platforms about content/topics restricted or effectively banned on Youtube. For example Full30.com is interesting video platform about firearms.
And pornhub is for porn, but they don't replace each other, they fill each other's gaps (of content), they add up to one another and combine into one to give us all that is required, the video content that we need, like Yin and Yang

The only problem trying to go google free for me is finding certain videos on other video hosting sites. For example I could not find Streets of Bakersfield by Buck Owens and Dwight Yoakum on Vimeo. Ended up watching on duckduckgo youtube no cookie even though it stated I can still be tracked.
Just use https://invidio.us More info here. There are several Firefox add-ons that redirect YouTube requests to invidio.us (I don't know about Chromium).
Thanks summerheat I suppose that's the best alternative for me, it's even one of the recommendations at https://tutanota.com/blog/posts/how-to-leave-google-gmail/. I just wasn't sure if tracking was still present when using invidio since it wasn't their first recommendation at tutanota. "If you absolutely want to watch a video on YouTube, we recommend watching it via Invidio or via NewPipe, which is an awesome Android app that is available on F-Droid."
Well, believe it or not, but after 20 years of using Google Search, I had to make the switch to DuckDuckGo. Not because I wasn't satisfied with search results or worried of being tracked. But some idiot decided to redesign Google Search, and it now looks like crap. Seriously, just how dumb are the people employed at these companies. I like the "hooktube" thing, they even have a redirector extension (for Firefox) so all youtube links opens in hooktube instead. "Hooktube – Hooktube is basically a YouTube proxy, which allows you to unblock YouTube videos, download videos, and get around YouTube censorship restrictions (unless YouTube deletes the video completely). This also helps to keep your data from Google."
