Yes, Apple may be less open-source overall than Microsoft, at this point.

But their business model -- selling closed hardware and providing mostly free software -- doesn't depend much on collecting data about their customers. So they can take a pro-privacy stance in the US, differentiating themselves from Google, Facebook, and (now, more and more) Microsoft.

However, they're not idealistic friends of privacy, by any means. Contrast them and Google vs China, for example.

OK, so Apple wanted to nuke Facebook's and Google's apps that violated their ToS (and users' privacy). Those apps had relied on misusing their enterprise keys to evade Apple app review. So the only way to nuke them was by revoking their enterprise keys. So now they have new enterprise keys, and can reissue their internal apps. But the bad apps are still dead.
