It's been a while since I've done that, so nothing definite comes to mind. Maybe Mint has bloated enough that 8GB isn't enough space. Or maybe there's something strange going on with Ubuntu/Mint. You could try Debian with Gnome. Or you could try manual disk setup.

I'm using a 128 GB disk for the LUKS setup. How can I go about attempting a manual disk setup?

I use an 8 gig 2.0 USB stick even though I also have a 256 gig 3.0 USB stick I use for my restore images.
I also use Linux Mint and think it is pretty fast.
Everybody has their own ways to make a bootable Linux USB stick.

I get the installed from: https://www.pendrivelinux.com/universal-usb-installer-easy-as-1-2-3/

it is straight forward to use. Download the Distro ISO you plan on using , either 32 or 64 bit. Run the program I linked to and in a short while , you should be running. On my machine I have to boot to BIOS and select boot from USB. I Also reformat the Stick first

I don't see that LUKS encrypted Linux install is possible with this program? To be clear, I had no problem installing Linux to the live mode USB drive (using LiLi, as suggested by the walkthrough I followed). The problem occurs after booting to the Linux environment using the live mode USB drive, and attempting to install a LUKS encrypted scheme to my intended USB drive.

What OS are you using to make the bootable usb?

I used Windows to install Linux Mint 18 as a Live flash drive. As usual, I have no trouble dealing with the Windows portion of the process. Once I get to the Linux environment, it doesn't want to work.

I can boot into my Live linux and complete the first steps - enabling LUKS encryption in Ubiquity. That is, I open terminal and run:
    sudo apt-get remove ubiquity
    sudo apt-get update
    sudo apt-get install ubiquity
Then I plug in my USB drive (the intended drive for Linux Mint LUKS encrypted install)
then back to Terminal and run
    sudo ubiquity
    Ubiquity opens fine
Then I start the process. I start to choose options for the install, including selecting the option for LUKS FDE and choosing a password
The install starts to run and somewhere through the process I simply get an error message that the installer crashed.
This happens every time I try this.

I yesterday tried to start over new, and I downloaded a new ISO (Linux Mint 18.1) and installed this fresh onto my Live usb drive.
Then I boot to live USB drive and do the steps in terminal:
    sudo apt-get remove ubiquity
    sudo apt-get update
    sudo apt-get install ubiquity
Then I plug in my USB drive (the intended drive for Linux Mint LUKS encrypted install)
then back to Terminal and run
    sudo ubiquity
I immediately get a message that the installer has crashed, before even opening. Even rebooting the live linux and re-trying the steps results in this every single time. To add a bit more information, if I boot to this live linux and go straight to Terminal and type "sudo ubiquity", it opens no problem. Of course, in this instance of ubiquity the option of LUKS encryption is not enabled.

Is there no way for me to install LUKS encrypted Linux in a Windows environment? This process is entirely frustrating to me.
