This is the Linux that I want to run but not with the desktop that comes with it. I'd like to get XFCE or LXDE - something closer to the Win7 desktop.

I tried and failed a couple of times and have gone back to Mint but not my preference.

Sorry about the newbie request but any help would be appreciated. Thanks

What you want is either Xubuntu (Xfce desktop) or Lubuntu (LXDE desktop). Both are nice alternatives to the default Unity desktop:

    Xubuntu: http://xubuntu.org/

    Lubuntu: http://lubuntu.net/

I'm not sure why but Lubuntu wouldn't install with an encrypted hard drive so I am on UbuntuMate which is great.

Unity in 14.04 is actually pretty nice. All you need is a dock program to bring everything into menu for easy access.

To each his own, I really dislike Unity.

It's odd how Unity seems to have divided people almost 50/50. Personally, I prefer it. I usually configure it for show/hide.
