Is there a list of Services that Apps use. Like, what is the name of the service a certain app is running under so you can disable it?

Open command prompt and type "tasklist /svc" without the quotation marks. It'll list running processes and related services.

Can manage that with Autoruns - look at Services tab for relevant info and then right-click on that service and select Process Explorer. PE will open a service properties window where there are stop/restart buttons.

System Lookup is most excellent but you should be extremely careful disabling any Windows service
