Zanox AG, 'the leading European performance advertising network', has started marketing its proprietary fingerprint tracking:
Zanox is majority-owned by German publisher Axel Springer AG ('Bild'). In 2012, €5.3bn sales volume was tracked within the Zanox network.

I wonder whether AdBlock with EasyList Privacy would do the job.

This leads me to a bigger question: What is the optimal anti-tracking set-up? There are many different tools that seem to do similar things. It would be an overkill to use all or most of those. How does one avoid overkill?

It would as there aren't Zanox blocking rules in EasyPrivacy but in EasyList.

That depends. As far as your browser is concerned, Adblock should be enough. But if you open html pages, say, in your email program or in your RSS reader, Adblock won't help. However, if you have adequate entries in your hosts file or in dnsmasq or in your proxy or .... , Zanox and the likes will be blocked in those applications, too.
