what is the most anonymous method to IM/Email

I want something easy and convenient. Some ive seen are TORchat (although i keep having troubles with that, i dont seem to appear online), Cryptochat, ChatCrypt and i also saw another CryptoChat4 which seems to be some sort of skype add on.

As for emailing methods the best ive seen so far are anonymousspeech and countermail.

Any suggestions?

UPDATE: Chatcrypt has no notification noise or anything and its somewhat irritating. I really liked TORchat but due to technical difficulties i cant use it.

 

email:

use any email provider of your choosing just encrypt your message or text before sending it. remember to choose a local encryption methods. google it.
i.e. for files you can use Axcrypt.

IM:

use Pidgin with encryption plugin. dont remember the name but install it and search for it in the plugin menu.both participants must have it installed!
