webmail safety/header etc

    is email header (from:, to :..) encrypted or not when you use webmail through https (if not than certain emails once the header is formed on the server can be intercepted)and
    is there a way to configure your webmail account (gmail,hotmail ,other ) to make the server encrypt the email traffic to the recipients server ?
    (because it is not in general<-popular Online Email Services
