how can i stop firefox updating itself automatically, the reason for this is because with each new version some of my extensions or plugins stop working and i cant find replacements either through lack of experience with firefox or simply not finding anything.....

i have tried all the usual things like disabling updating in the options and searching the net for a fix, but firefox just ignores any of my update options and updates without asking only saying i need to restart to update....

Tools > Options > Advanced > Update > Firefox Updates:

    Tick: Never check for updates

Untick: Use a background service to install updates

You should never see an update again.

If you check your services, do you have Mozilla Maintenance Service installed? If yes, what is it's startup type? If Automatic, set it to Disabled. Also check scheduled tasks and see if there is an update task scheduled. Disable that too.

That service can be uninstalled without issue too if that helps.
