Yes you can as long you are doing full backups, I always use the Recovery CD of SP for backups and restores. I'm even planning to uninstall SP under Windows forever, since I decided not to backup my actual system partition anymore.
Doing a backup/restore of your actual system is a bad procedure IMO, it might be infected, because it has been online too long.

No. You have to boot to the recovery CD and then image and restore, which doesn't require installing. The IT Edition allows you to pop the CD in the system while windows is running and image the system. Significant difference. The IT edition is priced outside the home market to say the least, but thats as much a factor of the licensing as anything.

doctorow's talking about running SP from the CD in an already booted Windows system.
An example to spot the difference: let's say that you want to backup your system right now.
With SP Desktop Edition, you insert the recovery CD in the CD/DVD drive, reboot the system, check the CMOS setup to boot from CD-ROM first, reboot again, load the recovery environment (WinPE/VistaPE) and then you perform the backup.
With SP IT Edition, you insert the recovery CD in the CD/DVD drive and perform the backup in the live system as if SP was installed. Do you see the difference? :)

The major important difference with the IT edition for technicians,of course is its ability to allow unlimited use on any servers, desktops and laptops as required for maintenance purposes.

With the Desktop,it is licenced for single usage and not even possible to run an active installed SP on two partitions when multibooting, for example.

The CD however can be used- IT edition not required, even though SP isnt installed.

DS apparently has an option that verifies that the written/restored image matches what's in the image; see the /V option on http://www.drivesnapshot.de/en/restdos.htm.

    Robert,

I have tried the -V switch and it significantly prolongs the restore process. I've stopped using -V in my test computer as I want the restored OS even if it did fail the -V. It hasn't failed -V by the way.
