Just stick to dumb phones and you'll be fine

Do standard Windows antivirus vendors included Symbian viruses in their definitions?

Looks like it. On the NOD32 definitions page, viruses that affect the Symbian OS are listed.

SymbOS/Cabir.K for one and there are many more listed.
