Default Exchange Backup help

hello all

i have 3 servers running windows server 2003. The first one is DC the second runs Exchange the third runs ISA server i have downloaded Acronis true image Echo enterprise server.

My Exchange server setup is in the C: and D: Partitions

what is the best practice to BACKUP the Exchange server.

1 - is there any services should i stop ?

2 - is there any special needs i have to do ?
