I don't want to get into ANY political discussion. I'm just wondering if it's possible to wipe out the email server 100% secure and what software could be used for it.
Which email server? Or do you mean wiping out your account on someone's server? If it's your server, it should be on a FDE box. Just change the passphrase and don't retain it. Then reformat the disk, and reinstall. Or if you're paranoid, physically destroy the disk. If it's someone else's server, there's nothing that you can do (honorably, anyway).
Was there any backup storage? If I were running an email server for my job or business, I would have a backup task that made a copy of all the email at regular intervals. Maybe this is on a USB disk drive but it could also be sent to a remote location. You would need to find this backup data and erase/destroy as well.
Once something is on the internet you're pretty much out of luck That's why encrypting e-Mails is important If the server is yours you can wipe it's harddrive with the DD Linux command, or by using DBAN (easier).
IMAP or POP? Who is your host? Caveats: If it's your Inbox, parties that sent you those emails have a copy.
