Hi....Can anyone tell me the difference between Java and Java Script? I'm testing proxy via my opera browser and I'm checking my IP at http://www.hiproxy.com/rip.htm ....In my browser I have the option to disable java or java scipt...when I disable just one it stops the IP check page. Which is the correct one for me to disable? or both?

That site actually uses both Java (Java applets) and Javascript. However, they are specifically using a Java applet that downloads and runs locally on your machine in order to determine your real IP address, instead of seeing a proxy server, if indeed you are using one. (The use of a Java applet to discover a PC's real IP address is a common method for bypassing proxy protection.)
As to the difference between the two, a google search on the terms: java versus javascript will return a large number of pages about this. Inspite of the similarity (ie. the word "java") in these names, the two are totally different. Here's just one of the sites from the search I mentioned:
