1kg Texas T-Bone steak, now in the old fashion scale, that would be 2.2 pounds, placed on a Bar-B-Q, when medium rare add chips on the side and mushroom sauce. Follow this with Coffee Icecream for dessert ;) ;D

Don't know why exactly, but my favorite food is so difficult to actually get at, when I get to eat it, and especially a lot of it, I always declare it's my favorite food in the whole world.

Probably because it is available only in Florida or very near there, (so until I moved here I couldn't get it but on rare visits, as it won't keep more than a day uncooked and then goes funky in a day after cooking- and freezing ruins it, so it's awful if shipped anywhere); it has to be in season even if you do visit FL; it must be prepared JUST RIGHT; it's a total pain in the neck to eat- real physical labor involved; and is obscenely expensive per pound---

after all that, once it is in your mouth maybe you savor it with especial glee.

Some of you surely know about the luscious delight of

P.S. What in heaven's name is a prarie oyster, I thought I knew a lot about food, but have never heard of this one.

For a feast, how about some gator bits, clotille's crawfish pie, house salad, Caesar salad, seafood gumbo, chicken/andouille gumbo, French fries, jambalaya (cup), oyster po-boy, roast beef po-boy, shrimp Creole, crawfish etouffee, pasta bon temp, Cajun chicken pasta, friend catfish platter, seafood platter, orange blossom special, and cherry bomb.

In addition, a selection of wine, spirits, and beer. :)

Hey Wildman,

I'm aware you love to eat, do you go for exotics when given a chance?

Say..........Duck (done properly w/spicy plum sauce, fantastic!), Pheasant (do not.....overcook) Gator (greasy if fried),
Rattlesnake (broiled like lobster), Iguana (my buddy swears roasted, haven't tried this one yet lol ;D ),
Frog's Legs (far superior to chicken!), Rabbit (stewed w/red wine), Squirrel (the reds, small but tasty),
Woodchuck (not yet), Beaver (not yet, I hear the tail broiled is a delicasy),
Feral Swine (sausage and peppers...d-licious!), Big Game (elk, buffalo, moose, antelope, usually steaked),
ALL Fish (fabulous bio-proteins in sushi), Snails, you name it! Given the chance, a willing eater... ;D 8)

This may all sound like stuff eaten by the "man in the tee-pee",
but you'd have to understand some history to see where I'm coming from.....waste NO FOOD!

:o With the exception of just a few items, believe it or not the wildman has eaten most of the delicacies listed here. I think I'll have fun for a while and let you guess as to which ones the wildman has not partaken in.

I Roast Lamb last night, placed it in a deep stainless steel dish, smeared it with a thick layer of Vegemite so it was all black, sprinkled Thyme over it until there was a sea of green, sprinkled a little mixed herbs, sprinkled Season All, added a dusting of cracked pepper, and lastly added about 1.5cm of water into the dish. Set the oven on 170c and cooked it for 3 ½ hours. My partner, she boiled veggies up, and when soft placed them on a baking tray, sprinkled flour over them and then Season All, gave them a coating of olive oil, in the oven for 2 hours, recoated them in olive oil several times while being cooked.

This my friends is called “The Perfect Roast”, and it is one that you cannot fail with, very quick, simple and easy to do. Don’t tell your guest about the vegemite until after they have eaten, so they don’t put any preconceived ideas into their minds…

:o Ironic!! Speaking of lamb, tonights cuisine is: Broiled lamb chops, angle hair past with Alfredo sauce, mixed green salad with ranch dressing, sour dough bread, pumpkin pie for desert and the as always one a day beer (bier).

What no mint sauce? I didn't know lamb roast could be eaten without mint sauce, and especially by those from the land of OZ.

:o Is Feral Swine the same as Wild Boar? If it is then that is one I can say yes to, but if not then no.

(1) No Iguana (yet).

(2) No Beaver (yet).

(3) No Woodchuck (yet).

(4) No Squirrel (yet).

??? I don't know Peaches, the three and a half years that I lived there, all would take mint, vinegar, sugar and water, put it in a bottle, let it stand for days and then use it on their lamb roasts. Granted that has been forty years ago and things could have changed.

Are there any that you've tried Wildman that you don't like?
How about black bear (from the mountains, sweeter than the ones that eat fish)?

Although my cooking style changes on the fly, it's good you do the mint sauce for lamb yourself,
cause the store-bought stuff IMO destroys the savory flavor of lamb (love those grilled riblets, yummy!)

Well, aside from ice cream, any Vietnamese dish. :)

When i was in Saigon last year, i had the pleasure of tasting some of the most mouth watering cuisine i have ever had. 8)

:) I guess I should clarify. My mom's folks lived in Oregon, my uncle was quiet the hunter and my aunt quite the cook. I liked the taste of the things she fixed. You could go into my uncle's house and the freezer would be full of meat and not a stick of it anything but wild game or fish. I would eat it and then ask what it was. I like some things better than others, like most all I think. There are some things that I ate while in Viet Nam that I would not try again, but this isn't the place to say what that was, plus I had me a few 33's at the time. Other items have been sampled thought out the world over an extended period of time. Loved the wild boar, it was done in the Samoan fashion (buried in the pit). Love them frog legs also (that was no joke). It is true I just plain love to eat.

The spouse does a good job on the meat loaf, but my mom's was still the best. Mom has been gone over 20 years now and be damn if we ever could find her recipe box. Am still upset about that.

Looking forward to Thursday, which will be spent at my daughter's house, with my son-in-law and my three grand children (two boys 13 and 11 plus one girl 7). The daughter turned out to be a damn good cook also, don't tell the spouse, but I think our daughter is the better cook of the two.

The spouse likes the chicken, so much so that I have accused her of clucking once in a while. Do the rest of you like the bird? What are some of your more favorite ways, the bird is fixed?

Tonight was left over pork tenderloin (Bar-B-Q), bread stuffing, mixed green salad, grilled toast, the always one a day beer (bier) and I think the last piece of pumpkin pie.

:-\ I do not want to see food for a couple of days. I am like the turkey, stuffed. The daughter gets the left overs, maybe the wildman will go to lunch at her house in the next couple of days, but right now don't even want to think about it.

The daughter is a damn good cook, and the meal was scrumptious, had all the trimmings and traditional thanksgiving fair, plus two beers, (I feel good). Hope all had as good a thanksgiving as I did.

1st favorite of mine was already noted before- but my 2nd most favorite comes in as such a close 2nd it bears mentioning, perhaps almost as a tie after all:

A delight I found as a child blanketing the mountains of New England and which can be found in similar environs globally- but which is, I hear, not as abundant in the wild as in the past- and certainly not the same commercially grown- plump, delicious

;) It don't look so good for my consumption of turkey soup in the near future, but there is always Xmas, unless we have ham. Hey ham and bean soup? Just thinking ahead.

The spouse has a roast thawing out, could be we might be having pot roast for the evening meal, but to early to tell.

I love the different culinary items that you all seem to enjoy, gives me new ideas and suggestions for the spouse to cook. Some times however the spouse just laughs, I wonder what that means.

:o Dart weren't no pot roast last night, that be a flank steak. Was good, the spouse marinaded it in the What's this here sauce and then broiled it.

Love the brisket, potato salad, japelanio corn bread and a long neck Lone Star. Damn I did it again, I have done gone and made myself hungry.

Another idea: What are some of the items you fix especially for the holidays?

The spouse make her own version of trail mix, using the various Check cereals, but she kicks it way up. I admit I look forward to it every season (goes real good with the one a day beer (bier)).

Since we've started chatting about cooking-and incase anybody cares.
My new favorite thing to cook that's fast and easy for the kids, are omelets.
I put hashbrown, sausage, and cheese in them. Then, the kiddos (and myself) get very impressed when I can flip the egg over the top. Then of course, melted cheese on top. Can never have tooooo much cheese!!!! ;)

Grandma just had double knee replacement a few weeks ago.
So, BJ and I will be trying our hand at cooking our own turkey this year.

If you haven't tried Spaten (http://www.spatenusa.com/3_products/3_1_prod_spectrum/), you've been missing out (second oldest brewery).
Exceptionally clean, smooth, and satisfying with character all it's own. Pricey, but well worth it.

That you limit yourself to one a day Wildman, go with the Optimator.

When I was in Bavaria once, and remember correctly, I had the pleasure to taste SPATEN beer. A bit strong, isn't it?
Well..if its imported into the US, then no worry about it being strong...! lol

:o Yup the German bier (beer) is real good, the two years spent in Germany taught me quiet a bit. Belgium bier (beer) haven't tried any of that (Brands available in the U.S.A. please ). Checz bier (beer) is good also I like the Urquel Pilsner. Yes I limit myself to one beer (bier) a day, but one damn good beer (bier). This time of year in Germany they have a style known as Alt, wish I could find it here in the U.S.A., talk about your good.

;D Thanks, one can never learn enough about beer (bier). How they can come up with so many different styles and tastes from not that many ingredients just boggles my mind. As I said learned quiet a bit the two years I spent in Germany. MY personal taste runs toward the lagers and pilsners, although I have tried some of the other styles.

8) I don't use the name wildman just for the heck of it, even though I have mellowed as I get older. Long story short, had my first taste of the brew at a rather young age (and liked it). Have partaken in some very rip roaring parties where Germany bier was involved also. The rest is history as they say (but what a history).

Classic european schnitzel is quickly fried in butter with a hint of fresh ground parsley, lemon a must....
I've had it this way in Austria. I prefer traditional recipes, not so much the american er, ah takes...

Nat, you could substitute pork cutlets instead.
They cook approx the same time and are just as lean....probably more readily available as well.

Sometimes I do the light breading with japanese honey panko flakes....
appealing color and texture, good flavor contrast with lemon. ;) 8)

If the local grocery has an asian aisle, look there.
If there are any japanese restaurants around they should have a supplier....
tempura batter is close, but will alter the consistency, so not really.

Honey alone is not suitable as the panko flakes are somehow, and ever so slightly infused.
No biggie though, you can opt for fresh breadcrumbs and carefully add your own spice mixture.

And....what do you mean, quickly? ;D :D

:) I now eat before I even look at this thread, if I didn't, I would be trying to e-mail myself to places unknown. A good German food meal for Christmas sound rather appealing to me. You also bring back memories, I also liked the wurst off the vendors (the red ones were my favorite) in Kaiserslauten, the brotchen (bun) was to die for, and also bring on the horseradish and brown mustard plus sauerkraut and of course a bier.

Haven't had a schnitzel since I left Germany in 1980, man do I still miss it, Jaeger was the style I liked (love mushrooms). Damn have made myself hungry again.

I remember it had quiet a few tour buses outside and the place was packed. The chicken was bier battered and deep fired in lard. I think it was approx. 40 to 50K from Kaiserslauten.

to and thru germany all over, I've never made it down to area of Kaiserslauten.

The chicken was fired in LARD ?? Not these days anymore..got to watch my arteries ! But I bet it was just heavenly......:P

If anyone likes ham,here is a good recipe

Ingredients One 8- to 10-pound fully cooked brine-cured (wet-cured) ham, on the bone or boneless
1 cup pineapple juice
1 cup red-currant jelly
2 tablespoons light brown sugar
2 tablespoons dry mustard
1 tablespoon cider vinegar
Whole cloves

Prep Time: 10 minutes
Baking Time: 3 1/2 to 4 hours plus resting
Makes 12 servings plus leftovers



Directions
1. Preheat the oven to 350F. Place the ham and pineapple juice in a roasting pan. Cover the pan tightly with foil. Bake for 22 minutes per pound or until a meat thermometer inserted in the center of the ham (not touching the bone) registers 135F to 140F.

2. Meanwhile, in a small saucepan, stir the jelly, sugar and mustard over medium heat until smooth. Remove from the heat and add the vinegar. Score a diamond pattern on the ham; insert cloves into diamonds. Spoon over or brush with one-third of glaze.

3. Bake ham for 30 minutes more, brushing occasionally with glaze. Place the ham on a platter. Cover loosely with foil. Let sit for at least 30 minutes. Slice the ham. In the small saucepan, boil the ham cooking juices to reduce by one-third; serve with the ham.

;D Well the Christmas dinner is over, and I am like the turkey I just had (STUFFED). The spouse did an excellent job, and dinner was scrumptious. The wildman has been informed we shall have a repeat tomorrow night, and there will be plenty of turkey left to make turkey soup also. The wildman is now much happier. I hope all had a scrumptious Holiday meal. Let us know what you had, and if it is quote out of the norm (Turkey and Ham) defiantly let us in on it. Happy Holidays and Marry Christmas.

8) Turkey soup is yummy in the tummy, no matter what it is washed down by. I also like the green tea and honey (hot or iced).
