Will Windows Defender still update automatically if I disable Windows Update??

But it can be told to update before a daily scheduled scan.

I guess the registry trick for MSE (http://www.mydigitallife.info/2010/01/05/fix-microsoft-security-essentials-mse-not-auto-update-virus-and-spyware-definitions-signature-problem/) may also work with windows defender. But MD only updates 2-3 times a week if automatic or manually updated, although it updates atleast twise a day in their server (https://www.microsoft.com/security/portal/Definitions/ADL.aspx).
