Update to build versions?

Do we have to uninstall previous version every time to install a new version,
or can we install over the old one?

You can install a new build right over the top of your current build.

However, it is recommended that any previous build be uninstalled.

Almost a matter of personal preference.

I've installed new builds over the top of older builds, not to keep, just to test.

And I have installed over top of every build/version since inception, kept 'em all, and no problems to date. :)
