Well, are we talking encrypting communications or stored data? If stored data, have a look at Truecrypt, it's free and pretty straightforward.

CraigM31, also, look into AxCrypt (http://www.axantum.com/AxCrypt/Introduction.html) for single file encryption in Windows, except Vista.
