How would one go about setting this up? Will the client connect to two servers? I realize I could set one up downstream and they would both show all the client data via replication. But will the clients hit the upstream server to get signature and program updates if the downstream one is down?

Are you talking admin server or lan update?
If Lan update, you could provide two IP's to one name so that nod32.domain.com points to 192.168.0.1 and 192.168.0.2 for example. You could then just specify one lan update server and DNS round robin would let it hit both.
Since I'm not eSet, I don't know if Nod will cache the first IP it gets and only try that per reboot, or if it re-checks DNS, or if it will actually look at both IP's if one is down...
But that would be easy enough to test.
