The help file has an image:

Notice how there is an option for CPU priority. BUT, on the actual NOD32 window, this is what is there:

Where did the options go in the real version?

How do I change the CPU priority to lowest (I can't do it from the task manager).

I am using Windows XP Pro SP2. NOD32 3.0.642.0 and everything is updated.

Hello!

The picture in the Help file section is a bit outdated . It shows the way it was in 3.0.5xx versions , for example . ESET have changed the place of this option and have put it inside the ThreatSense engine options

The run scans with lower priority is enabled by default and can be found as shown here :

Okay cool!

But, how do I run all scans in low priority?

Like in the following image:

If this option is enabled , all scans performed using the selected profile , are automatically run with low priority

Well to back up, sometimes a scan runs and ESET is running in "normal" mode at 50% CPU in the Task Manager... and my entire computer is very, very sluggish because of it. Once I pause the scan, the computer is normal.

This leads me to believe it is not running in low priority..
