Can someone tell me the proper way to set NOD32 up as an on demand scanner only? Much appreciated. ;D

Disable AMON, IMON, DMON and EMON. I think thats it. :-\

Or hit the quit button which will unload the module drivers completely so they won't mess up any other AV running on your pc.
